Etymology: Seltzer is named after a place, not a process. The word comes from "Selters", a spring at Niederselters in the German state of Hesse, whose naturally carbonated mineral water was bottled and sold across Europe. "Selterswasser" (Selters water) became the generic German term for any fizzy water, and English borrowed the name for the same thing. The plural "seltzers" is the form used when speaking of several kinds or several bottles of the drink. In everyday American English, "seltzer" usually means plain carbonated water without sweeteners, while the flavored versions now sold widely are often called seltzers too, which is why the word has drifted toward the modern sense of a flavored, low-calorie drink.
