Etymology: Sarma is a Turkish word for a dish that dates back to the Ottoman kitchen, where "sarma" was a verb-derived term meaning "something wrapped." The name comes from the Turkish verb "sarmak," to wrap, and the dish is a parcel of minced meat and rice rolled in cabbage or vine leaves, which is why the word describes the technique rather than the ingredients. English picked up the word through Russian. The Russian form "sarmá" is borrowed from Ottoman Turkish, so the term travelled north and east through the Ottoman sphere before reaching English. That route explains why the dish is most often associated today with the Balkans, the Caucasus and Eastern Europe, where similar stuffed-leaf dishes are everyday food.
