Put together, the verb means to adjust to a climate again, typically after time away from it. The prefix "re-" is the ordinary English marker of repetition or return, so it adds nothing mysterious: a person or animal who has left a place and then has to readjust to its conditions is, in effect, going through the adaptation a second time.
