The pairing follows the same pattern as "shepherd" or "swineherd," and it describes a person whose job is to tend livestock. The first element, "pig," has a more surprising history than the second. Old English had "picga" and "pigga" for a young pig or a child, and the word for the adult animal was "swīn," which survives in "swineherd." "Pig" only gradually displaced "swine" as the everyday term for the animal, so "pigkeeper" is a relatively modern-sounding word built on a term that once mostly referred to young animals.
