The compound describes the wood itself: hornbeam timber is famously dense and hard, so the tree was named for being as tough as horn. The English form arrived in Late Middle English as "hornbeme" and "hernbem," and the spelling shifted until "hornbeam" settled in. The older "bem" ending survived in the name for centuries after "beam" had come to mean only a length of timber, which is why the word looks like a compound of two unrelated nouns today. "Hornbeam" is a plural here because the word names a whole group of trees, so "hornbeams" simply refers to more than one of them.
