Etymology: The gilthead gets its name from a plain description of its appearance: a bright golden band that runs between its eyes, across the top of the head. "Gilt" is the old past participle of "gild," meaning covered with a thin layer of gold, and "head" is the ordinary English word for the top of the body. Put together, the name amounts to "gold-headed," a label that a fisherman or market seller could read straight off the fish. The compound is transparent in a way many fish names are not, and it shows how English speakers often named animals by sight rather than by scientific classification. The gold marking that gives the fish its name is the feature that sets it apart from the many similar sea breams sold in the same markets.
