The trade it names is the work of installing and connecting gas pipes and appliances so that fuel reaches a stove, heater or boiler without leaking. Because the word is built from two ordinary English words, its parts explain its meaning directly. The "gas" here is the fuel itself. Coal gas, and later natural gas, was piped into buildings for lighting and heating, so the work needed its own name. "Fitting" in this sense is the older meaning of fixing a component to something else, which is why a gasfitter is the person who attaches gas pipes and devices to the supply.
