Etymology: "Cattleman" is about as transparent as English compounds get: it simply joins "cattle" and "man". "Cattle" came into English from Anglo-Norman "catel", a word for movable property, which is also the root of "chattel", so the livestock sense is an older extension of a general notion of goods. Put "man" after it and you get a person whose business is those animals, a sense that had emerged by the time the compound was formed. The word therefore keeps the older wealth-and-property meaning of "cattle" at its core: a cattleman is, in effect, a man whose livelihood is movable property on four legs.
