Etymology: "Airmailed" is simply the past tense and past participle of "airmail," so its history is that of the verb it comes from. "Airmail" is a compound of "air" and "mail," joining the old word for letters and parcels carried by post with the medium through which they travelled. The mail itself is far older than the flying machine, and the combination describes a method of delivery rather than a new kind of letter. Once the compound existed, adding the usual "-ed" to make a past form was the ordinary step for an English verb. Used as an adjective, the form describes something that has been sent this way, as in an airmailed package.
