The word is a colloquial shortening of "agricultural business," and its formation follows the pattern of many 20th-century American coinages that chop a long phrase into a compact, slangy form, much as "biz" itself already shortened "business." The "agri-" element entered English as a combining form through a long line of Latin compounds, most famously "agriculture," which came into English in the 15th century. Its appearance in "agribusiness," first recorded in the 1950s, paved the way for the shorter form. The term "agribusiness" was popularized in the United States by Harvard professors John Davis and Ray Goldberg, who used it in their 1957 work on the modern food system, and "agribiz" followed as a casual clipping.
